Eating my way across I-10 and I-40

After years of discussion, this year my friend and I are driving across I-10 and then coming back on I-40 in September. We are calling it the "Eat Our Way Across the USA Tour" and will be packing lots of Pepto and antacid. We live in Las Vegas and therefore prefer to hang with the locals rather than the tourists. We will be driving quickly through AZ, NM and TX in order to spend more time in the south. I have reviewed a number of great posts (especially regarding BBQ) but just want to make sure that the information is still valid (after a year or two) and if there is anything new in the last year. Whether my friend likes it or not, I am more interested in the rural LA area than New Orleans. We will move off of I-10 once we get to Cajun Country (as the state tourism site calls it) like Beaux Bridge, Villa Platte, Eunice and Opelousas as well as take 49 through New Iberia and Abbeville then take it to N.O. and back to the 10. In addition, I am driving my half-ton pickup and will have much space for coolers to bring food back. Therefore, please take me to the boudin, pie and foods made with brown roux. Lastly, regarding the trip back on the 40, are there really places in TN that make fried banana sandwiches like Elvis used to eat?
