I've been leaning more toward pizza than calzones, in the galleygirl oven lately, so it was finally time to graduate to a pizza-peel, for that crust-to-stone direct contact, instead of my typical mode of stretched (tranparently thin!!!) in a pan, and baked on the stone...Everything I found seemed to be cutting boards with beveled edges, so I used that as an excuse to finally visit Eastern Bakers, recommended by MichealB, Striperguy, and I don't even know how many others.
I love this place! A jumble of everything from under-the-sink Hobarts, to 5-gallon salad spinners, to every single sugar-shaker, cut-glass creamer, stainless ramekin, pastry form, food mold,cutting boards in every size and color, and a great knife selection...I forgot to check on the price, but they had super-heavy square pizza stones, which I may need...
I found the sought-after pizza peel, 14", sliver-thin, light-weight, and a bargain at $15...My other purchases included generic 1/2 sheet Silpats(Fiberlux) at $12 a pop, and 1/4 sheet Wearever baking sheets at $5.75...Can't remember what the 1/2 sheets were, less than $10, I think $9.50...I didn't need them, because my 10 years old ones are the only cookie sheets I'll ever need...These things are among the workhorses of my kitchen...But if you don't have one.... (g)
In need of sustenance, I went around the corner to Regina's, where I caught the last single-slice they had left...Regina's serves slices til 3, or whenever they run out....Altho I sorta thought I made a mistake by going for the last one, I was proven wrong....Maybe because I wasn't biting into a mouth-burning slice the way I usually am, I was fully able to appreciate the genius that is Regina's. That chewy, moist, sourdough crust...Just enough grease shining on the surface of the cheese, and the light, but so clear-tasting tomato sauce...I sometimes forget how good it is....
Inspired, I figured I'd buy a pizza's worth of dough, to try out my new peel tonite, but, surprise, they're the only place I know of that won't sell dough...Oh, duh; that would be giving away the starter, for that amazing crust---they must've thought I was a spy(g)...
