This is my first post, but I just came across a great thread on cooking duck in this forum from back in January, so I hope this is an appropriate setting for my question.
We just moved from the Washington DC area to Albuquerque, and were disappointed to find that fresh duck breast isn't readily available here. While we have tried several varieties/brands in the past, the fresh D'Artagnan Magret was our go-to choice when it was available, and I've never worked with frozen duck.
I noticed that D'Artagnan Magret can be ordered online, but I was curious about how the frozen breast compares to the fresh variety. Does anyone have experience with both? If so, are they noticeably different?
Alternatively, if anyone is in the Albuquerque area and knows where I might find fresh duck locally, that would be awesome, too!
