At practically every restaurant in the Yucatan, even thr touristy ones, you can request a tiny dish of simple, mindbendingly hot salsa made with freshly roasted green habanero chiles and a little lime juice. It is sometimes called dog's-nose salsa, because after a bit of it one's own nose is cold and wet.

Does such a thing exist in Los Angeles, or must I lie awake dreaming of Merida?
