Went to DiFara's last night and lucked out to not only find a spot right in front, but the place was nearly empty.
Talked to Dom for a minute, asked him a few quick questions, one being what's the difference between a regular pie and an 'extra cheese' pie. I was under the impression that the extra cheese pie had some additional cheese other than regular mozerella on it, but he said it's just more cheese.
I'm pretty sure I remember someone posting something about Dom using fresh Buffala mozerella on his pies in addition to regular mozerella. I've watched him make pies quite a few times now, and I've seen him put on what appeared to be a different type of cheese (possibly the Buffala), but I'm not sure how to get a pie with this.
After quick deliberation I ordered a sausage pie and watched him make it. Didn't look like any additional cheese was involved. Just the normal mozerella.
Then some people came in after me and ordered a cheese pie and I saw him put on some chunks of cheese that looked different from the regular mozerella. Maybe I'm crazy, but can anyone solve this mystery?
Nevertheless, the sausage pie was amazing as usual. My first sausage pie, actually. The sausage was very tastey, with a slight fennel flavor to it. The pie was perfectly cooked and absolutely scrumptious.
