Theabroma recently went to the main location of Barbacoa Estilo Hidalgo in SW Dallas (a secondary location of which I wrote up in a recent report at the link below). She loved it and has proposed a Saturday crawl through a few of the local Hidalgo-style taquerias and restaurants that feature lamb or mutton barbacoa. (The main location of Barbacoa Estilo Hidalgo will also, with advance notice, prepare pozole verde, if anyone's interested in that.)
The date is still up in the air at this point. The sooner the better, but the intent is to work with the schedules of anyone who would like to come. Once that's settled we can firm up the itinerary. (Theabroma is doing some more recon work, in the meantime.)
