Desserts for my sister's wedding.. 100 more guests than I had thought!

When she got engaged and we talked about her wedding, I offered to make gift bags of madeleines and chocolate dipped almonds. This was when she was talking about 30 or so people.

Well, it turns out she has invited about 200.

I can't renege because not only did I give my word but she's my sister. The trouble is, I am limited to an apartment kitchen (one stove) at my house and then her house up in VT and I have no idea what she has. I don't want to bother her with baking/asking her where things are/getting upset because she doesn't have what I need.

I think I can change up what I'm making but it has to be something I can easily pack up in little bags and something I can make before/bake on Thursday (wedding on Saturday).

The wedding is two states away. I can go up with dough/batter.

I'm not responsible for the wedding cake as that is taken care of but I'm providing the desserts people will actually eat (who eats the fondant?).

What can I do? What would you make? It needs to be something I can pack up into "goodie bags" and send off. All I can think of are the nuts and that's not enough. What sustainable cookies would do?

She really wants madeleines. UGH!
