Cook's Country did their take on the traditional Eclair Cake, in which you layer graham crackers, Cool Whip and instant vanilla pudding in a casserole dish, cover with some kind of store-bought chocolate topping and chill overnight. In their version, the pudding was homemade as was the whipped cream. The chocolate topping is a ganache. This recipe is incredibly delicious.
I was wondering if anyone out there has any similar kind of dessert they make, preferably from scratch. I love the idea of it being self-contained in one dish. I have been tasked with making a dessert for Easter and I have to travel an hour by car. Something like what i described is easy to transport and feeds a considerable number of people. Thanks!
