One dish made quite an impression on me during a business trip to the Mile-High City recently. I was dining at the Brown Palace Hotel's beautiful Palace Arms restaurant & had ordered an appetiser simply described as "Crab, Baby vegetables, Lemongrass, Basil, Micro Salad".
Turned out it was a luscious crab cake, perched atop a little mound of vegetables and drizzled with a, get this, Thai-inspired "tom kha" sauce. I mentioned it to the waiter, he explained that the Chef de Cuisine, Thanawat Bates, is Thai.
Amazing, I sure didn't expect to encounter this fusion-taste in Palace Arms.
BTW, the dessert was also truly enjoyable - described on the menu as a "Contemporary Sundae, with Oreo, Waffles, Raspberry, Devonshire Cream, Peanut, Banana, Cherry", it was an eye-popping, lip-smacking deconstructed "sundae". Loved the cotton candy at the side, too. For a brief moment, I felt like a kid again :-)
