Really delicious and new to us in Brooklyn with vegetarian options/tasting menu? River Cafe? Something else?

We are looking for something new to us for a nice dinner on a Friday night. We live in Carroll Gardens, but don't have to stay super local. We've done Grocery a few times, Lucali is an informal but delicious standby, like Lunetta very much but haven't been really recently, enjoyed Brucie, Prime Meats, don't care for Chestnut. Outside of Carroll Gardens, we quite liked Stone Park Cafe, Benchmark, Tempo (rest in peace), Ici, General Greene, Luz, don't love al di la. I know that is a pretty big range in terms of kinds of food and formality, but wanted to give an idea of what we like and don't like. Di Fara is probably my favorite of the bunch, but I don't feel like waiting in the line for a special night out. Maybe for lunch the next day. Anyway, I have a reservation in the meantime at River Cafe, but not sure if it is actually impressive food-wise, especially for a vegetarian. Somehow we have never made it over there. I can never remember if Saul does vegetarian food (I think they don't). I have heard good things about Applewood, Farm at Adderley, Aurora but don't know anything specifically about options for vegetarians.
