No mention of these, or for that matter, beets of any kind: I am amazed.
For the past 3 or 4 weeks we've been buying them fresh from a local grower, but they surely must be available in local farmers markets elsewehre. They store very well under our counter. What a treat!
We leave half an inch of stem, clip the root about half an inch from the bulb, scrub and boil for ± 20 mnutes in salted water, squoosh them out of their skins, add butter, salt, maybe a bit of vinegar, and slice. Good cold the next day too.
