I'm searching for a stockpot that I would be able to do a light saute or sweat of mirapoix, and if possible, browing meats. Today I looked at a Cuisinart hard anodized stockpot with the glass lid. Does anyone have one? I'm not sure if the nonstick surface is of the teflon coat variety that always risks peeling or is it a impregnated surface with nonstick qualities, that I wouldn't have to worry about it. What are your opinions?
