I LOVE the taste of cream cheese frosting, but I don't like how dense it is. I'm not a buttercream fan either. I just don't like that feeling of having a mouthful of softened butter.
So I was excited when I came across a comment to a blog post saying that the commenter liked to make cream cheese frosting made with whipped cream instead of butter. I had to try it. I whipped up the heavy cream I had sitting around in my fridge (maybe 3/4 cup?) and, once it was fairly stiff, added in one block of cream cheese and some confectioner's sugar to taste. I also added vanilla and a little apple cider for flavor. It was great! The texture was a little lighter and fluffier than butter-based cream cheese frosting, but it was just as easy to pipe and spread. It firmed up nicely in the fridge too. This is going to be my new standard cream cheese frosting. Just wanted to share in case anyone else is looking for a lighter cream cheese frosting!
