Enjoyed great meals (twice in the past 2 weeks) at Shaw's/Schaumburg. For approximately 4-6 weeks out of the year, they fly fresh Copper River salmon from Alaska.
Both preparations were simple but excellent. The most recent featured a mild raspberry vinagarette (on the side) with baby aparagus. The fish was simply grilled. (Entree cost= $25.95)
If you are only accustomed to the farmed Atlantic stuff, you really should try Pacific wild caught salmon. It's a world of difference.
If interested, give them a call to make sure that the "fresh salmon are still running".
