My local Asian market has fresh Whelk. (Members of the snail family that look like their real Dad may have been a conch.) It appears the Italians serve these with Pasta and the Asians eat them with black bean sauce, etc. I'm trying to find the best way to cook Whelk. Steam them? Boil them? Some recipes call for chopping them in their shells and sauteing them. So to those of you Chowhounds that have been successful in hunting and gathering whelk, any ideas on the best way to prepare them?
