I've seen a few posts around here regarding cooking schools around LA but I was wondering if anyone could provide any updates of what some of the good ones are? I'm looking for less "hands on" cook in groups while the instructor walks around, but more of an instructional class where you really learn the fundamentals of cooking. I want to be hands on, but I want a place that is more about learning and less about making new friends and drinking wine.
I've taken classes at Sur La Table and that's not really what I am looking to spend my money on. I learned a few things that I still use today, but it was mostly relying on the people around you and hoping they know what they are doing. I like the bonding aspect of it, but I am not taking much home with me other than that.
I wish I had time and money to go to Le Cordon Bleu, but I work a fulltime job and really only have time for night courses or weekends. I've looked around at places like Surfas, Chef Eric, The New School and Epicurean, but either the reviews aren't great, it's the "hands on" group style classes or the times the classes are offered are during the day on weekdays. Does anyone have any insight on the schools listed above, different schools or local chefs that have instructional courses?
