Cookery lessons in NYC

As those of you who kindly gave me some advice on supermarkets will remember, I'm soon to be moving to manhattan for 6 months. I'll be leaving my husband at home in the UK, so in thinking of ways to fill the time, I think it would be fun to take part in some cookery lessons. I'm a decent and adventurous home cook, but there are definitely plenty of ways to improve my repetoire.

I'd be interested in evening courses, single day or weekend courses. I'll be working full time, so it would need to be outside office hours.

I'd be interested in learning some classic techniques (eg making sauces, filleting fish, butchery, putting flavours together, pastry etc), or specific cuisines (japanese, italian, french, and obviously it'd be fun to learn about american food too!)

Can anyone recommend cooking schools I should check out, or individual courses you may have done that have been useful and fun?

In terms of budget, I actually have no idea how much these things should cost, so am pretty open! Would prefer to do fewer things of a good quality though, so am willing to spend accordingly.
