As much as I love to try new things, I was a tad skeptical when a friend pushed her "collard" pizza on me a couple of nights ago. However.... it was soooo savory. The collards were chopped and highly seasoned, and the other primary topping was feta cheese. (she said she wanted to experiment instead of using typical spinach.) I know I live in the South and all, but this was a new one for me. Just thought I would pass it along in case anyone else was thinking about substituting spinach one day.
