I've now tried cochinita pibil at Amaranta (in the Topanga Canyon mall), Chichen Itza (McArthur park location), and La Flor de Yucatan (Hoover st.).
I've had them once only and never have had the dish from another source. I'm not claiming to be an expert.
Here are my rankings:

I had La Flor's cochinita this weekend. It was perfectly tender, not the least bit dried out, but the flavour wasn't entirely pleasing. It needed acid of some type. It was on the one-noted sweet side and the porky goodness was more masked than I like.
Chichen Itza's had some good pieces and some dried out stringy pieces. I liked the flavour second best.
Amaranta was downright pleasurable in all aspects. The flavouring was great and the pork was perfectly cooked. It had plenty of fattiness without having actual large pieces of fat interspersed like at the other two places. They didn't give you a ton of it but they gave you all good pieces of pork.
