I went to China eight years ago. Since then the best noodles I have ever had (and cheapest) were the Lanzhou Noodles (made in Lanzhou, China). The dough is made fresh every day, and when you order, they pick up the ball of dough and make the noodles right before your eyes, stretching the dough into 1/4" thick noodles and then wok'ing them up with oil, garlic, chilies and some veggies.
I can't find any English references to these on the net (found one outdated link). But what's worse - I can never find them in Chinatown or anywhere else in Manhattan - but, then, I am not a die-hard chowhound and that's why I am appealing to the experts for some help!!!!
Does anyone know (a) a URL for the recipe, or (b) where you can get them in NYC????
