I've had this dish in a few Montreal restaurants. It seems to be a Northern Chinese speciality. The dish consists of large chunks braised pork spine which is served hot or tepid with a set of plastic gloves. You just put the gloves on, grab a chunk and have at it. It's a gorgeous dish with lovely sweet, fragrant, tender meat and cartilage that's almost as much fun to eat as it is delicious.
So does anybody know the name of this dish? I've only ordered it as Pork Bone or Pork Bone Salad. I'd love to know the name in Chinese so I can order it without having to point at another table or spend five minutes trying to explain myself to a waiter. And if anyone had a recipe for it, that would be wonderful.
