I just returned after spending a few days in Palm Springs visiting East-Coast friends. For Saturday lunch we went to Cheeky's and I had their Chilaquiles. Back on the SF Bay board, Chilaquiles is "Dish of the Month" this month so I extended that to Palm Springs. Cheeky's version is excellent, the tortilla strips at once soft and still a bit crispy and they stayed that way, achieving that without the strips being submerged in sauce on the plate. It's a verde (green sauce) version, seemingly light on the sauce but in reality not at all light on flavor. On the bottom is a layer of chorizo with tomatillo, queso fresco, cilantro, onion, and the sauce above. I chose two fried eggs on top (optional, $2). It was quite spicy (meaning hot) in various bites, so if you don't like hot, this isn't for you. It's a different version from the others I've had, but really they're all different; that's the nature of Chilaquiles.
