I tried Nyleve's Chicken Tagine, it was excellent. Years ago a friend gave me a Moroccan cookbook but I had not thought about it until I saw the tagine recipe here. When I dug it out, I saw that there are two chicken and olive recipes, and one olive and chicken recipe in the book, lol, one of them is identical to Nyleve's except that it includes cinnamon. I wasn't sure if I should have included it or not but at the last moment I decided to include it (1/2 tsp.) It was a good addition. It has been unusually cold here so the spices where very warming but the lemon and parsley gave it a springy note, overall the dish was very well balanced. DH liked it too, as he loves olives. In the next few weeks I will try the other suggestions. I can't locate a copy of Paula Wolfert's book so if anyone can e-mail her chicken and olive recipe to me (firstname.lastname@example.org) or post it I will be very thankful. Thanks again!
