The cheese list at Rooster's Wood-fired Kitchen in Charlotte includes three “local” cheeses among six choices.

We picked the Goat Lady chevre from North Carolina plus the Thomasville tomme and the Asher blue from Georgia’s Sweet Grass Dairy. The mild chevre was very soft, almost fluffy in texture with a wonderful fresh creaminess. The raw milk Thomasville tomme was so good, rich with buttery goodness and complex with hints of grass and enoki mushroom. Best of all, the fantastic raw milk Asher blue cheese from Georgia, featuring a glossy creamy texture, great depth, just the right amount of salt, and earthy complexity.
