Chao Zhou (Chiu Chow and several other transliterations) braised goose is one of my favorite Chinese dishes. I have found two very good specimens in Hong Kong. One is at Golden Island in Star House on the Kowloon side, a restaurant mentioned recently on this board. The other is at Carrianna (Chiu Chow) Restaurant in Wan Chai, 151 Gloucester Road, 1/F. My wife and found the service at the latter to be much warmer and more helpful than at the former. The goose is at least as as good as Golden Island's. However, Golden Island offers some baby oyster dishes I haven't found at Carriana. By the way, Carrianna Restaurant is a chain, with branches in Shenzhen, Shanghai, Haikou, and Kunming.
