ok i am posting this specifically as per pumpkin's request, but if anyone else is interested, here is the recipe for carrot top's cake:
1 cup veg oil
2 cups granulated sugar
3 cups freshly grated carrots (about 7)
1 cup walnuts, coarsely chopped
2 cups all purp flour
1tbs baking powder
1tsp ground cinnamon
1tsp freshly grated nutmeg
4 large eggs
4tbsp (1/2stick) unsalted butter, softened
1/4cup solid veg shortening
12oz (1 1/2 lg pkgs) cream cheese, softened
1tbsp vanilla extract
1 1/2 cups confectioners sugar
preheat oven to 350f. oil an 11x9" sheet cake pan.
make the cake: in a large bowl combine the oil, gran sugar, carrots, walnuts, flour, baking powder, cinnamon, nutmeg, and salt and stir to combine. add the eggs and mix well. pour the batter into the prepared pan. bake until the cake is springy to the touch, 45min. cool in pan on wire rack.
make the frosting: cream together the butter, shortening, and cream cheese w/ wooden spoon or hand mixer in medium bowl. add milk and vanilla. add conf sugar and stir until smooth. when cake is cool, frost.
i used this recipe for cupcakes for the nyc bbq this year, modifying time and temp according to the back of a betty crocker cake mix box for cupcakes. it is fairly easy and although i don't love carrot cake, this came out pretty well.
