canvas or plastic piping bag for sausage

I just got "Chacuterie" and want to try the boudin blanc. As with all of the emulsified recipes they say not to use the Kitchenaid mixer sausage stuffer, but instead use a piping bag. They say a canvas bag. Will it make a difference if I use a plastic one?
