cajun country in october - will there be no boiling points?!

hey everyone...i plan on moving from NY to CA stopping throughout the bayou via the 10 and am seeking help and suggestions. now ive been to NOLA before but i really cant wait to stop at crawfish shacks down dirt roads and the like (please tell me there are some left!). i eat anything really, but prefer seafood to meat and sausage and all that, although i know im gonna have to try gumbo and jambalaya along the way (only had it once, and up north!) i already plan on going to prejean's and D.I.'s so far (i have no idea how long ill be in the area, probably a few days at the most). thanks for your help; i think im looking forward to this part of the country the most. p.s. off the beaten path is a major plus!
