I'm looking buy baking chocolate (5lbs or less), semi-sweet to bittersweet (60% and higher). Would prefer fair trade. Or manufacturers like Callebaut or Valrhona. Have ruled out local grocery store (too much sugar, low cocoa butter content), Whole Foods and Trader Joe's in Manhattan (too expensive). My preference would be to find a retailer in (increasing order or distance) Manhattan, NYC, and so on. Will consider mail order.
