Best Brunch and Dinner (Tasting Menu) for Birthday?

I have scoured the boards back to November and have a decent idea of what kind of food experience I am looking for- just need some opinions on brunch and birthday dinner. This is for a group of 5, most of us are foodies and two of us are celebrating our 29th and 30th birthdays next weekend (2/18-2/20).

Brunch- all I have so far is Bouchon

Dinner- initially considered Joel Robuchon but slightly too pricey and perhaps the ambiance seems like it may be too stuffy/white-tablecloth. Strongly considering Sage as the price is more reachable (esp with Chef's tasting menu and beer/wine pairings ~$80-120), but wondering if it will disappoint... also considering Michael Mina (which is the best of his restaurants?) or Bradley Ogden. Guy Savoy would be too much (price-wise).

I wanted to check out the new Cosmopolitan but it seems the dining is just a place to swallow your money.
