I'm in the market for a 5ish qt brasier or rondeau.
All of my copper is actually Mauviel 2.5mm with cast iron handles. I've stuck with this because I've enjoyed a deep deep discount through my former employer.
However, we didn't carry the roundeaux and I didn't like the 5qt saute due to lack of helper handle. I also am no longer at this job and since i'm paying full price am looking at options from Falk and Bourgeat as well.

Seems like a decent price but the thickness of the copper is not called out. Everythign else I've found on Bourgeat is 2.5mm. Is that the only quality they make?
I live in Phoenix so finding Falk or Bourgeat to look at and feel in person is not possible that I know of. I'm comfortable ordering the Falk without seeing but would like more info on Bourgeat if possible....
