ChuckS, I guess I'll have to settle for boneless, and Joanie, it's safe to go back...

Craving the stir-fried catfish in chili sauce at Dok Bua today, I was informed that they will NO LONGER serve the bone-in option...I pretty much thought my word had ended, but ordered it anyway, "pet,pet", of course....

I have to admit, it was pretty damned good...They didn't need to fry the stuff as long as necessary to cook it thru to said bone, and the catfish was juicy and tender...Much more fish-flesh mouthfeel, and dare I say it, perhaps a little healthier?

Anyway, if you want those crispy-crunchies, just ask for it extra-crispy...Me, I have to go blow my nose again now...;)
