Biscuits and Gravy

I am from the south, and I have been in New York for 10 years. I have never been able to find a biscuits and sausage gravy other than in my own kitchen- and it is way too much work. If you aren't from the south, or haven't tried these before, it is basically buttermilk biscuites split in half with a "white gravy" ladled over them. The white gravy is basically a roux that is made in the pan after patty sausage has been cooked (some people use bacon or other breakfast meet) and then milk is added and cooked over low heat to cook out the any taste of flour and leave you with a white sauce with little chunks of sausage. Personally I add fresh sage, a little butter and extra sausage chunks to mine, but any other restaurant version will do. Any suggestions?
