Beaver Creek and Edwards Dinners (CO)

Had three excellent meals last week at Grouse Mountain Grill and Splendido in Beaver
Creek and at Juniper in Edwards. Service at all was excellent as well.

Grouse Mountain Grill, in the Pines Lodge in Beaver Creek -- main courses were the signature dish, Pretzel-Crusted Pork Chops, and a beautifully medium rare Limousin New York Strip. Starters were Baby Spinach and Toasted Walnut Salad with Pomegranate
Vinaigrette, Pear Tomatoes and Bleu Cheese and Goat Cheese Cake with Thyme-Honey, Hazelnuts, Belgian Endive, Grilled Pear and Proscuitto.

Juniper, in the Rivercenter in Edwards -- We started with the Bibb Lettuce Salad with Lavender-Mustard Seed Vinaigrette, Avocado and Shaved Manchego and an interesting and delicious Duck Confit and Fig Jam Pizza with Goat Cheese, Pomegranate and Arugula. My wife had an entree of Roasted Tasmanian Salmon with Golden Beet Orzo "Risotto" that was light and delicious. I had one of my favorite dishes that is always good at Juniper -- Veal Osso Buco served with Swiss Chard, Roasted Garlic Potatoes and
Panko Gremolata. This is definitely not a light meal -- just wonderful.

Splendido, in The Chateau in Beaver Creek -- dinner here last Saturday night was one of the best we have had in a long time. We started with Jumbo Lump Blue Crab Cake and Yellow Fin and Yellow Tail Tuna presented as a tartar and as sashimi with fresh wasabi. Main courses were the Whole Dover Sole a la Meuniere and the Wood Oven Roasted Maine Lobster with gold potato puree. All these dishes were over the top. Service and ambience are top notch. Very pricey, but a great "special" meal.
