baked-salted shrimp in the shell, and tripe

Hi folks

Please forgive me if this is a stupid question, but when eating the baked-salted shrimp, I know you eat the shell (which is edible in that state), but what about the head? Do you pop the hole creature in your mouth?

Also, I'm tempted to get a pho one time with more exotic ingredients than brisket & flank. How does tripe taste? What about other pho options?
