Can anyone tell me what was wrong with a can of coconut milk I used recently? I purchased a can of Goya coconut milk (usually use Thai Kitchen, but Goya was on sale) at the supermarket. The can was intact, no dents, and the expiration was sometime in 2014. When I opened it, I noticed that it had a mealy, grainy texture. I sniffed it and it smelled perfectly fine so I went ahead and used it for curry. I made a very, very basic curry- just red curry paste and the coconut milk and the grainy texture was still there after cooking. We ate it and it's been 4 or 5 days so it was probably ok to consume but I've never seen such an odd texture in coconut milk before. Anyone know what the problem might have been?
