I have a large old pickle jar that I keeps all my saved bacon fat . I've been on the road the better part of the last 6 months and have cooked less than usual. In June, I cooked down the whole jar to get the older and newer fats to combine to try and "preserve" my beautiful fat collection. But since I've used it so little the last few months I'm wondering if I need to start over, or if it's just fine.
