Long story, but I bought a Costco-sized bag of baby carrots for a weekend trip and now have all but 3 handfuls leftover! (My friends don't like veggies I guess)
The last time I cooked baby carrots, they dried out and were gross. Did I do something wrong?
Besides the standard carrot cake, carrot bread, etc using grated carrots, any ideas for using up some of these?
