I posted this on Tom's board last week:

I had the best fish in my life last night. It was flounder topped with lump crabmeat and small shrimp. I honestly have never had a better seafood dish anywhere. I went to Aymar's Restaurant in Foxworth, MS. Chef Aymar cooked for Warren LeRuth and the Brennan's in the 70's and 80's, then retired and opened his own restaurant.
It's about 1 1/2 hours from Mandeville. Take LA 21 north. Go through Bogalusa, Varnado, Angie, and cross into Mississippi. Take a left on New Hope to Kokomo Road, go 7.25 miles, and you will see the signs for the restaurant. You will probably want to call for directions, (601) 731-9966.

Sorry if I sound like a shill for this restaurant, but it was honestly the most delicious fish I have ever had.
