Austin area breakfast

I know this questions was asked before a few years ago, but things change, so I thought I'd ask it again. We're looking for good places for breakfast, and it seems like we've tried everything out there. Magnolia, Kerbey, Omelettry, Waterloo, and so on. We're not looking for breakfast taco places, as he doesn't like eggs, but more something with gourmet pancakes, belgian waffles, french toast, etc. He used to live in Dallas, and we both miss Breadwinners and Dream Cafe for their slightly more unique, upscale breakfast offerings than we've found in Austin. Mag and Kerbey are fairly pedestrian compared to those gems, but they seem to be the best thing going, as far as we've found in our searches.

Ideas? We'd go to Lakeway, Round Rock, wherever for a good stuffed french toast, crepes, or gourmet pancake. Thank you in advance!
