I am looking for people's opinions of whether or not Ann Arbor can support a high end restaurant unlike any that are considered such at the moment.
In my experience places like The Moveable Feast, Earle, West End Grill, Gratzi, Chophouse, etc. are all half dabbling their feet in serious cuisine. They are good and different in their own way of course but nothing that stands out on a national level.
I am looking to do something downtown, 60 seats, three menus, $55-$75 price range and give some real identity to the place.
I have a ton of specifics that I will spare you, but do you think Ann Arbor is willing to pay attention to food for more than a minute?
I go back and forth on the issue myself but think that there is a niche for a true chef driven boutique-ish kind of restaurant that has an identifiable cuisine which will attract food lovers from around. Something to put Ann Arbor on the map I guess.
Any thoughts on the subject?
