Two Alinea links that may be of interest for those who have dined there, or just those who are curious about Chef Achatz.
First is a blog by a Duke University grad student and part-time cook who snagged a 5 night stage at Alinea earlier this summer. Reads best if you start on day one and work back to the final day, so I’ve linked to the 2nd page … scroll to the bottom to read the first day, which was pretty rough for the aspiring chef.
Pretty long (Tour Menu?) but worth reading in small bites.
Second link is to a 2003 article in the pre-Alinea days when Grant was a rising star chef at Trio. Most interesting parts to me were Trotter’s Godfather-like quotes from when Grant quit too soon ("Don't ever call me. Don't ever use me as a reference. Don't put me on your resume. As far as I am concerned, if you haven't worked here a year, you haven't worked here."), and the description of his four years with Thomas Keller at The French Laundry, which reads a lot different than what’s in the book “Alinea”.
