It's a little off the the main restaurant row, but went to Aji finally with a few friends on Saturday and tried a sampling of their various little dishes. The owner, who was very hospitable and clearly excited about the place described the food as being identical in ingredients and flavors to traditional dishes, but with a more modern presentation. The highlight for me were the skewers of beef hearts that had nice vinegary marinade, slightl char and a ton of real beefy flavor without a lot of that livery organ meat taste -- non offal-eaters would probably enjoy these if they just give them a try. The ceviche, was also excellent, made from good size chunks of flounder and not overly marinated to the point of being opaque all the way through like you see from time to time, still kind of raw but very fresh like sushi grade fish. Finally, the stuffed grilled squid and chicken wings were also very good. A vegetarian at the table gave high marks to the spinach empanada and fried potato slices in cheese sauce. The size of the dishes are like a generous tapas plate, definitely enough for sharing with two or three people where everyone gets a good sample of each dish. We washed everything down with Peruvian beers in frosty mugs that went down too fast to count, though I didn't realize this until I was staggering by the YMCA on my walk back up the Slope.
