I-5: Breakfast between Bellingham and Seattle

While the hands-down best place for breakfast along this stretch of I-5 is The Rhododendron Cafe (about two miles west, off exit 236), The Rhody is open for breakfast only on Saturdays and Sundays. What to do weekdays?

We found one new place recently that we can recommend. It's called The Valley Cafe and it's about 1 mile west of I-5 at exit 230, on route 20 when it meets a road/street called Avon-Allan. It is a thoroughly country place. Not fancy at all, but down-to-earth, inexpensive, bustling, cheerful, friendly. The baking is good, and the rest is plentiful. (The Calico Kitchen, right in Mount Vernon, also serves big breakfasts, but it seems to us a big business rather than a real expression of country cooking.)

Surely there's a decent place for breakfast in or near Everett. Anyone out there know what it is?
