Only 4 Nights in LV This Time - Help Me Decide!

We usually spend over a week while in LV but have opted for a long weekend for our next trip, since we've exhausted a lot of things to do at this point, however, we love it so much that we do want to return.

Having said that, we only have 4 nights to dine. This presents quite a problem for us. Obviously, haven been there extensively before, we've eaten at a lot of fine restaurants and we are looking for new experiences this time around.

So, if a restaurant is not mentioned below, please assume we've either a) been there already; b) menu is too extensive on seafood because hubbie does not eat it at all ; or c) not asian since we're from NY and can get excellent asian of every type anywhere here. Although, we will be doing LOS for a lunch at some point - since we keep missing out on it.

We're looking for beautiful atmosphere, romantic, and great food, especially for one meal where it is our annivesary - so the best of the best for that night. Price doesn't matter as you will see from my (not so short) list of possiblities:

Bouchon
Prime
Bradly Ogden
Zefferino
Il Mulino (is service still a problem???)
Fleur de Lys
Picasso
Pinot Brasserie
Renoir
Bartolotta
Emeril's (I know, I hestitate to even put this on my list, not the same caliber, however, I've been to all of his places and always enjoy myself there - maybe this should be a lunch instead?)

We are fighting the urge to return to Delmonico (been there twice - might be one of my all time fav restaurants). So, if I missed a steakhouse that you think should be considered please make a suggestion - the only one I was really interested in other than Delmonico is Prime.
