3 nights, 3 days--Where to eat in SEATTLE?

My husband and I--both huge foodies but new to this site--will be in Seattle in 2 weeks for a conference. I haven't even begun figuring out what I will do during the days he is at his conference but first comes first--food. We have 3 dinners together, 1 lunch together and I have 2 lunches on my own (one of which will definitely be Elliot's for Oysters since I'm the only oyster lover in the family).

First, after some research on the web, chowhound, etc.--the following are the restaurants I'm thinking for dinner:

Poppy
Staple and Fancy Mercantile
Dahlia Lounge
Shiro’s (is this the best sushi in Seattle or is there another you recommend?)
Sitka and Spruce
Harvest Vine (I'm reading mixed things--what do you think?)

Any thoughts on narrowing this list down to 3?

Second, for lunch. Thoughts on the following:

Steelhead Diner
Salumi
Walrus and Carpenter
Elliot’s

Am I missing anything?
