3 days in SF and too many choices - please critique my list

I have 3 wonderful days in San Francisco coming up. My list of places to eat is growing larger by the minute (thanks to this board) so I am now at the point where decisions must be made and your advice, as always would be greatlly appreciated.

Places we are going to for sure:
Coco500
Yank Sing

For Spanish we are torn between - Piperade and Bocadillos.

For Italian we are torn between - A16 and Incanto.

For pizza - North Beach Pizza (unless there's somewhere better that I don't know about.)

For breakfast - Eagle Cafe.

For nibbles/picnic - Ferry Building

For pastries - Tartine

Other possibilites out there for dinner - El Raigon, Luella, Slanted Door, Rue St Jacque.

Advice, opinions, other suggestions would all be welcome. I'm trying to cover a range of food (though preferably not sushi or Mexican). We are staying near Union Square but prepared to walk for miles, even jump on the Bart for a good feast!
