Two different questions--they don't have to be the the same location.
1) is there any place that does justice to conch fritters? I.e., that has a good source for them (not canned) and knows how to do them up up.
2) an informal place for grilled, fresh sardines, sandwich or platter.
Location is flexible, though preferably from Patchogue and going west to, if possible, not too close to the Queens border.
I'd thought of the Pine Aire Deli (at least for the latter), but didn't notice either on the menu.
