Our Favorite Vegetarian Dinner Recipes

Just because something is vegetarian doesn't mean it's healthy, in the same way as gluten-free doesn't mean fat-free or sugar-free. But these really are healthy veggie tacos, stuffed with seared poblano peppers, yellow squash, onions, and cremini mushrooms. OK, so it's topped with a little Cotija cheese, but as long as you don't load up on the cheese, it's OK and totally worth the taste addition. And the pico de gallo salsa?
