Traditional Irish breakfast food is savory and hearty. It involves meat, and it has potatoes, usually boiled, mashed or fried. Also known as Irish colcannon, this crisp, buttery pan-fried hash is delicious served with corned beef and mustard, or even simple roasted chicken. Colcannon has been around since at least the 18th century, and it's often simply potatoes mashed with cabbage.
